After several disappointing attempts to develop a bonbon featuring the unique tart taste of yuzu—a popular Asian citrus fruit—I finally succeeded with a recipe that’s a very satisfying combination of tart and sweet. It was inspired by the classic Sidecar cocktail typically made with Cognac, orange liqueur, lemon juice, and a sugared rim.
A Sidecar I recently created with Pierre Ferrand Yuzu Curacao (a French liqueur made with yuzus macerated in Cognac) was absolutely delicious. So I set about adapting it into an equally tasty bonbon. This Yuzu Sidecar features a ganache made with Yuzu Curacao, yuzu juice, freshly squeezed lemon juice, and white chocolate, encased in dark chocolate topped with a dusting of sugar. Yum.
