It takes a really great chocolate for me to add to my current variety of chocolates made by Valrhona in France. I tasted this single-origin Madagascar chocolate, made by Felchlin in Switzerland, during a class I took with Luis Amado, an internationally renowned chocolatier. After trying it again at home, I knew I wanted another dark chocolate for everyone else to enjoy as well.
The chocolate delivers a well-balanced fruity taste that is less acidic than some other chocolates made with Madagascar cacao beans. It has a hint of roasted nuts, forest berries, and warm spices, with a lovely, lingering finish.

I thought the combination would be ideal with the Madagascar chocolate and pink peppercorns I recently bought, but I was struggling with how to incorporate the wine. He generously shared his secret, which worked like a charm.
A red wine gelée tops a dark chocolate ganache laced with crushed Baies Rose pink peppercorns. Native to Madagascar, these berries have a gentle peppery flavor with fruity and floral notes that pair well with Madasgascar chocolate and a full-bodied red wine.
