When you’re in the mood for just a little chocolate snack, the size and shape of these tasting bars are just the thing. You can snap off a bite or two, share one with a friend, or just go ahead and enjoy the whole bar (each bar is 1″ x 4½”). Available in a changing variety of flavors, you can order individual bars, a custom box of 4 bars, or a variety box of 5 bars. These are for serious ginger lovers. First, I infuse dark chocolate ganache with freshly grated ginger. Second, I add a splash of Ginger Shrub—a syrup crafted from ginger, vinegar, and cane sugar using a centuries-old technique. And third, once the ganache is set and cut, I hand dip each piece in dark chocolate topped with a sliver of crystallized ginger. Ginger three ways…plus chocolate.
