I’m loving this Madagascar chocolate made by Felchlin in Switzerland. It’s delicious on its own and with other flavors that complement the unique taste of chocolate made with cacao beans grown in Madagascar. Crispy pieces with a hint of mango add a pop of color and a satisfying crunch. Pepper and chocolate? Surprisingly, yes!
The Salt ‘n’ Pepper version includes two kinds of peppercorns grown in Madagascar: a wild pepper called Voatsiperifery with floral and citrus notes, and Baies Rose pink peppercorns—not a true pepper but a berry related to cashews with a delicate peppery flavor. I couldn’t help adding a third pepper into the mix: Kampot Red Pepper, a rare pepper grown only in a specially-designated region of Cambodia. Its sweet and spicy notes add another flavor dimension. A sprinkling of Fleur de Sel from the Camargue region of France enhances the overall experience.

This flavor was inspired by a bonbon made by a friend who is also one of my favorite chocolatiers. I thought the combination would be ideal with the Madagascar chocolate and pink peppercorns I recently bought, but I was struggling with how to incorporate the wine. He generously shared his secret, which worked like a charm.
A red wine gelée tops a dark chocolate ganache laced with crushed Baies Rose pink peppercorns. Native to Madagascar, these berries have a gentle peppery flavor with fruity and floral notes that pair well with Madasgascar chocolate and a full-bodied red wine.
